The traditional Italian treat gets a makeover perfect for the fall and Thanksgiving dessert tables. This allows you to skip the pumpkin pie and opt for a handheld treat that is rich, tasty and unique.

1 1/2 c. ricotta cheese
1 c. canned pumpkin
seeds from one vanilla bean
1/4 tsp. pumpkin pie spice
1/4 tsp. cinnamon
24 mini or 12 regular cannoli shells
