These healthy, vegan & gluten free Pumpkin Walnut Quinoa Bars are low in sugar, high in protein & fiber & big on taste. These make a delicious breakfast or snack!

1 3/4 cups cooked quinoa*(~1/2 cup dry quinoa)
1/4 cup quinoa flour*
1 cup canned pumpkin
Pinch sea salt
3 tbsp flax meal
1/2 tsp cinnamon
1/2 tsp nutmeg
2 tbsp maple syrup
1 large egg white**
2 tbsp toasted walnuts
2 tbsp reduced sugar craisins or raisins
1 tbsp raw pepitas (pumpkin seeds) for garnish
