Warm corned beef drenched in gooey Swiss cheese surrounded by a buttery toast shell...it doesn't get better than these quick to make sandwiches.

12 slices Rye bread (if you don’t care for Rye, you can also use whole wheat)
Butter to spread on each piece of bread
12-18 thin slices of corned beef
6 T Thousand Island salad dressing
6 slices Swiss cheese
1 ¼ cup sauerkraut
Butter to spread on each piece of bread

1 ¼ cup sauerkraut
Warm a griddle or skillet to medium heat. Butter all the bread on one side. Then, lay out six slices of bread, butter side down, on the griddle/skillet. On each bread slice, layer the cheese, corned beef, dressing, sauerkraut, and then the second slice of bread (butter side up). Grill the reubens (flipping halfway through) until the cheese is melted and both sides of the bread are toasted.
