Quick Red Quinoa Salad

A super fast and healthy lunch.

Ingredients
1/2 cup red quinoa cooked
1/4 cup chopped cucumber
1/2 tomato chopped
1/2 avocado chopped
1/4 of small onion chopped
1 clove garlic peeled and chopped
2 tablespoons goat cheese
1 tablespoon olive oil
1 tablespoon balsamic vinegar
salt and pepper to taste
Chop all your veggies. Add veggies to quinoa. Crumble goat cheese onto salad. In a small bowl whisk together olive oil and vinegar. Top salad with balsamic mixture. That's all!
