This dish is the vegetarian perfect main dish for Thanksgiving or other holiday meals!

2 Delicata Squash

2 TBSP Butter, separated

1 tsp Brown Sugar

Salt/Pepper



3/4 Cup Quinoa

1 1/2 Cup Water

1 Medium Onion

1 Clove Garlic

1/4 Cup Dried Cranberries

1/2 tsp Thyme

1/4 tsp Cumin

1/4 tsp Sumac

1/4 Cup Mushrooms

1/4 Cup Chopped Pecans
