Delicious Jambalaya meets healthy quinoa in this easy, one dish dinner!

2 Cups Quinoa
4 Cups Chicken broth
4- Boneless skinless chicken breasts chopped into bite size pieces
1- Med/ Large onion diced
1- large green pepper diced
1- large or 2 small cans diced tomatoes- drained
2-packages kielbasa (I used turkey) chopped.
Jambalaya seasoning of choice (I used McCormick Creole Jambalaya - it is quite tasty and MSG free)
1-2 tbsp oil

This crispy Oven Fried Chicken recipe is coated with Ranch dressing and dredged in a flavorful blend of Corn Flakes, bread crumbs and zesty seasoning. Use chicken breast, thighs or drumsticks for an oven baked dinner that tastes like it's deep-fried! The easy oven fried chicken is delicious alongside mashed potatoes, mac and cheese, or Southern-style green beans.

1 c dry breadcrumbs
1 c Corn Flakes cereal crumbs
2 t sugar
2 t paprika
2 t onion powder
2 t garlic powder
2 t kosher salt
1/4 c canola oil
3-4 lbs. bone-in chicken pieces ( skin removed )
