Quinoa and roasted corn tossed with scallions, butter, lemon and a touch of honey.

2 ears corn, shucked
1 teaspoon olive oil
1 teaspoon lemon zest
1 tablespoons lemon juice
2 tablespoons unsalted butter, melted
2 teaspoons honey
1/4 teaspoon salt
Pinch of black pepper
1 cup quinoa
2 scallions or green onions, chopped
1/4 cup chopped fresh cilantro
