Healthy and of course Gluten-Free Quinoa with vegetables, Arugula leaves and one special ingredient. Very quick and easy dinner or lunch for picnic.

1 cup frozen Corn
½ Zucchini (about 1 cup)
½ cup frozen or fresh carrots
½ cup frozen Green beans
2 Tomatoes
1 small Onion
1 tsp Salt
3 Tbsp Olive oil
pinch of Black pepper
1 ½ Tbsp Turmeric
1-2 cups Arugula
