When I was a child one of my favorite books was, Rabbit Finds A Way, by Judy Delton. Rabbit went to Bear's house every Saturday for Carrot Cake, but one Saturday Bear didn't make carrot cake and Rabbit was sorely disappointed. That was until he realized he could get the recipe and make it himself! I'm quite certain that this is the recipe that Rabbit got from Bear, as it is so delicious I could eat it every Saturday! Dry Ingredients:
2 Cups Flour
2 Cups Sugar
2 Tsp. Cinnamon
1 Tsp. Nutmeg
1 Tsp. Baking Powder
1/2 Tsp. Salt
2 Tsp. Baking Soda
Other Ingredients:
1 1/2 Cup Vegetable Oil
4 Eggs
1 Tsp. Vanilla
3 Cups Grated Carrots
2 Cups Chopped Pecans
Frosting:
8 oz Pkg Cream Cheese
1/2 Cup Butter
1 Tsp. Vanilla
1/2 Tsp. Almond Extract
2 lb bag Powdered Sugar
2 Cups Flour
