1 TB oil
1 tsp minced garlic
1 medium onion, chopped
1 jar spaghetti suace
1 yellow squash
1 zuchinni
2 potatoes

1. Saute the minced garlic and chopped onion in the olive oil for 3-5 minutes until softened.
2. Add jar of spaghetti sauce.
3. Thinly slice the squash, zucchini, and potatoes into round discs.
4. Spray an 8x8 baking pan with nonstick spray.
5. Pour the spaghetti sauce mixture into the bottom of the pan.
6. Place the sliced vegetables on top of the sauce vertically, in an alternating pattern.
7. Season with italian seasoning, salt, and pepper.
8. Cover with foil and bake for 30 minutes at 400 degrees.
9. Remove the foil, sprinkle with parmesan cheese and bake for another 15 minutes.
