I can whip out a main dish in no time, but I really struggle with yummy side dishes. My husband is a meat-and-potatoes kind of guy, so I try to work potatoes into as many meals as I can. These potatoes are some of our family's favorites because they are so easy to prepare and use ingredients that you have in your pantry right now.

2 pounds red potatoes, quartered
1/4 cup vegetable oil (I have also used olive oil)
1 (1 oz) packet dry Ranch dressing mix
