Raspberry Chocoholic Buckwheat Pancakes

A light vegan, gluten free Raspberry Chocoholic Buckwheat Pancake filled with warm raspberries & bursting with chocolate that’s grain & dairy free. A breakfast delight that will trick any chocoholic into eating healthy.

1 very ripe banana
3/4 cup unsweetened coconut milk
2 flax eggs (to make -> 2 tbsp flax meal & 6 tbsp water), substitute 2 egg whites if not vegan
1 tsp almond extract
1/2 cup buckwheat flour
1 tsp baking powder
2 tbsp raw cacao powder
1/2 cup fresh raspberries
Optional Toppings: 2 tbsp unsweetened shredded coconut, mini chocolate chips (I use Enjoy Life) raspberries & bananas
