Red White & Blue Mini Fruit Pizza Cookies

Make up a batch of these mini fruit pizzas for your next BBQ and watch them fly off the plate! They are light and sweet. The perfect mixture of dessert and fruit salad.

Cookies:

1 c. butter, softened

1/2 c. shortening

1 1/2 c. sugar

1 egg

1 1/2 tsp. vanilla

1 1/2 tsp. almond extract

5 c. cake flour, sifted* (see notes at the end of the post for a great substitute for cake flour)

2 tsp. baking powder


Frosting:

4 oz. cream cheese
1 c. marshmallow creme


Fresh Fruit, any combination you desire
