Reese's Peanut Butter Cookie Ice Cream Sandwiches

Homemade peanut butter ice cream sandwiched between homemade peanut butter cookies, all stuffed with Reese's peanut butter cups. A decadent frozen treat for peanut butter and chocolate lovers!

Ice Cream:
3/4 cup peanut butter
1 cup sugar
1 1/2 cups heavy cream
1 1/2 cups milk
1/2 tsp vanilla
1/2 cup Reese's Peanut Butter Cup Unwrapped Mini Cups, frozen
1/3 cup peanut butter for swirl

Cookies:
1/2 cup butter or margarine
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/2 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 of a 12oz bag of miniature REESE’S® Peanut Butter Cups

Ice cream: Beat together peanut butter and sugar in a mixing bowl till smooth. Gradually beat in cream, then milk. Stir in vanilla. Chill mixture in an airtight container for several hours or overnight....
