No Churn Rhubarb Ice Cream is sweet, tart, and delicious!

4 c. sliced rhubarb
2 c. sugar
1 t. lemon juice
1 t. cinnamon
1/2 t. nutmeg
1/2 t. ginger
1/2 t. salt
1 c. heavy whipping cream
