1/4 cup butter
2 TBSP olive oil
1/2 cup rice
1 small onion, chopped
1 can beef consumme
Melt the butter and olive oil in a frying pan. Add the onion and rice and cook until lightly browned. Place in casserole dish and add consumme. Bake at 350 until rice has soaked up the liquids.
