Ricotta Jam Pudding

A super easy baked pudding sweetened with a jar of jam instead of sugar. Use a low-or no-sugar jam and you have a fantastically light and delicious dessert!

30 oz or so ricotta cheese
4 eggs
12 oz jar of jam [1 1/2 cups] [I used Orange Marmalade.]
Preheat oven to 350. Beat the eggs well, add cheese and jam. Mix well. Pour into greased 8 inch casserole dish. Cover dish. Bake about 60 minutes, until knife inserted in center comes out...
