4 apples, cut in eighths
2 t. cinnamon
5 T. sugar
2 c. sugar
4 eggs
1 c. oil
1/4 c. orange juice
3 c. flour
3 t. baking powder
1/2 t. salt
1 c. walnuts (optional)

Mix apples, cinnamon and sugar; set aside.
Preheat oven to 350 degrees. Beat sugar, eggs, oil and orange juice until smooth. Sift flour, baking powder and salt. Add flour mixture to sugar mixture (and nuts if using). Mix well. Pour ½ of the batter into a well-greased Bundt or 10" tube pan. Arrange ½ of the apple mixture top of batter. Pour remaining batter over apples. Arrange remaining apples on top of batter. Bake for 1-½ hours.
Allow cake to cool in an upright position.
May be frozen.
