Roast Lamb with Spicy Rice.

This dish is lovely served as Sunday lunch. Rather than use potatoes I thought a spicy rice would go well with the lamb, with a gravy made from the meat juices. I cooked half a leg of lamb as this dish is for 3-4 persons but if you are making for more than I would make a whole leg of lamb.

Roast Lamb – serves 3-4
½ leg of lamb - 1kg
3 cloves of garlic sliced
Few sprigs of fresh rosemary
Few sprigs of fresh thyme
1 tsp mayonnaise
1 tsp wholegrain mustard
1 tsp English mustard powder
6 mint leaves finely chopped
1 tsp garlic and ginger paste
1 tsp fresh ground black pepper
1 tbsp. olive oil
Juice of ½ lemon
Spicy Rice – serves 3-4
1 red, green & yellow pepper (capsicum) chopped into small pieces
1 red onion finely diced
1 cup of frozen peas
1tsp garlic and ginger paste
1 tsp mild curry powder
2 sprigs of thyme leaves only
1 tbsp. olive oil
Knob of butter
½ cup of cooked basmati rice
