Roasted Garlic & Red Skin Potato Salad

This twist on potato salad incorporates, roasted garlic and is paired with bacon, red peppers, celery and onion for extra flavor and crunch. This salad will be a serious hit with your family!

2 lb red potatoes
1 large sweet yellow onion diced
½ lb. bacon
¼ c. red bell pepper diced
2 stalks celery finely diced
1 bunch green onions chopped
6 hard boiled eggs chopped
1 c. mayonnaise
? c. Dijon
2 Tbsp. champagne vinegar (can substitute red wine vinegar)
2 tsp salt
½ tsp pepper
4 heads roasted garlic
1 Tbsp olive oil
