Light & Healthy whole roasted mushrooms with fresh tarragon

16 oz. baby bellas or white button mushrooms
2 tsp. olive oil
1 tbsp. balsamic vinegar
¾ tsp. kosher salt
Ground black pepper
2 stems of tarragon
