Roasted Potato Salad Cilantro Pesto

A warm potato salad with a cilantro pesto dressing

2 1/2 lbs. yukon gold potatoes, cut into 1 inch pieces
1 tbsp. olive oil
1 tsp. kosher salt
1/4 tsp. fresh ground black pepper
3/4 cup diced celery
1/2 cup diced onion
2 mangoes, peeled and diced

For the cilantro pesto:

3/4 cup chopped cilantro (pack the measuring cup)
1/4 cup chopped mint (pack the measuring cup)
1/2 to 1 jalapeno, ribs and seeds removed, minced
1 tsp. grated ginger
2 garlic cloves, minced
1/2 cup unsweetened shredded coconut, fresh or frozen (defrosted)
1/2 tsp. kosher salt
1/2 tsp. ground coriander
1 tsp. ground cumin
Juice of 1/2 lime
2 tbsp. water
2 tbsp. olive oil
