Roasted tomatoes and fennel pureed for a delicious and healthy soup

7 roma (plum, italian) tomatoes, cut in half
1 fennel bulb, cored and cut into 8
1 tbsp. olive oil
1 1/2 tsp. kosher salt
Fresh ground black pepper
1 1/2 cups chicken or vegetable broth
1/2 cup water

Marinated Taro Root

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
