Robust Spinach and Mushroom Frittata

This frittata has been added to my breakfast menu for my family. The bacon and cheeses and spices really give this dish a lot of good flavor, and lets not forget the nutritional benefits of the spinach in this dish. Frittatas have endless possibilities as they are rich in flavor, try adding your favorite ingredients like breakfast sausage, feta cheese, ham or turkey, it has much room to play with and the results are robust on the palate .

1/2 of a 10 oz pk of frozen spinach squeezed and dried well
6 eggs beaten
3 small peeled and boiled potatoes
1c sour cream
3/4c parmesan cheese
1/2c green onions
8-10 slices of cooked and crumbled bacon
4tb green pepper
1/4ts italian seasoning
4 cloves garlic minced
1/4 tsp nutmeg
1/4 tsp garlic powder
1/4 tsp onion powder
1 tsp paprika
1c shredded cheddar
1c shredded swiss cheese
1tsp paprika
