Simple and delicious rosemary Dijon pork loin.

1.75 lbs pork loin
1 tbsp dijon mustard
2 tbsp olive oil
1 tbsp rosemary (fresh or dried)
2 cloves garlic
1/2 onion
rice wine vinegar
Salt and Pepper
