Crust:
1/3 cup all-purpose flour
1/4 tsp. salt
1 tbs. sugar
2 tbs. butter diced into small cubes, divided
3 tbs. ice water

Filling:
1 medium-sized Gala apple
2 tbs. brown sugar
1/8 tsp. nutmeg
1/4 tsp. cinnamon
1/2 tsp. freshly squeezed orange juice

Egg Wash:
1 egg yolk beaten 2 tsp. heavy cream
Combine the flour, salt and sugar in a small bowl. Cut in 1 tablespoon of the butter with a pastry cutter, fork or your fingers until the mixture resembles very coarse sand. Stir in the ice water one tablespoon at a time until a dough forms. Turn the dough out onto a clean, lightly floured surface. Gently knead the dough until smooth. Shape the dough into a ball. Cover with plastic wrap and refrigerate for at least 30 minutes. Combine the brown sugar, nutmeg cinnamon and orange juice in a small bowl. Set aside. Peel and core the apple, and cut it into ΒΌ inch thick slices. Fan the apples out in circular pattern on top of the dough leaving a 1-inch border. Sprinkle the brown sugar mixture evenly over the apples. Dot the surface of the apples with the remaining tablespoon of butter. Fold the rim of dough up over the edges of the apples. Brush the folded dough with egg wash. Bake the tart in a 350 degree Fahrenheit oven for 25 minutes or until golden brown. Serve with vanilla bean ice cream.
