Salmon Over Orzo Risotto

Creamy Orzo Risotto studded with tomato,marinated artichoke hearts and topped with seasoned, flaky salmon.

4 TSP Olive Oil
¼ cup onion, diced
3 cloves garlic, minced
1 cup Orzo
2 cups Low Sodium Chicken Broth
1 tomato, diced
4 oz. Marinated Artichoke Hearts
2 8oz. Pieces of Salmon
1 TSP Garlic Powder
1 TSP Onion Powder
1 TSP Paprika
1 TSP Pepper
1 TSP Italian Seasoning
¼ cup Grated Parmesan Cheese
In a small saucepan over medium high heat, add 2 TSP olive oil. Add onion and garlic. Saute until softened, about 5 minutes. Add orzo and cook until some of the pieces turn golden brown, about 2 minutes....
