Salmon Skewers on Basmati Rice with Mange tout & Baby Carrots Healthy Tasty Dinner

2 Salmon Fillets ( cut into squares)
1 Orange Pepper (cut into squares)
1 Red Pepper (cut into squares)
1 Onion (quartered)
4 Cherry Tomatoes (halved)
4 Baby Corn (halved)
Juice of 1 Lemon
Sprinkle of Paprika
1 Cup Basmati Rice
100g Mange tout
100g Baby Carrots
1. Preheat the oven at 180*C. Skin the salmon. Cut salmon into squares. 2. Cut peppers into squares, quarter the onion & half the tomatoes & baby corn. 3. Arrange salmon, peppers, onion, tomatoes & baby corn onto skewers. 4. Juice 1 lemon in a bowl with paprika. 5. Pour the Juice over the Skewers. Place in oven for 12-15 min turning half way through. 6. Place the basmati rice into a saucepan & boil for 15 minutes on a medium heat. 7. Place the mange tout & baby carrots into a saucepan & boil for 10 minutes on a medium heat. 8. Place salmon skewers on basmati rice served with mange tout & baby carrots on the side. Enjoy!
