These are cookies that are filled with jam of your choice in the middle (raspberry is my favorite!), sprinkled with powdered sugar on top for the full flavor, and kept in your cupboard in a container for extra freshness.

1. 1 1/2 cups of butter, softened
2. 1/2 cup margarine, softened
3. 2 cups sugar
4. 4 eggs
5. 1 tsp vanilla extract
6. 4 cups flour
7. 1/2 cup jam of your choice

1. Preheat oven to 400*F
2. Add butter, margarine and sugar to mixer and mix well together.
3. Add one egg at a time and vanilla extract.
4. At a low speed, add one cup of flour until everything is combined.
5. Fill one pastry bag with cookie dough that has a large closed star tip and fill another pastry bag with jam and a plain small tip.
6, Pipe the dough onto a cookie sheet, about 2 inches in diameter. Make sure to have 1-2 inches in between each cookie. Add jam in the center of the dough.
7. Place in oven and bake 10-12 minutes or until edges are golden brown.
8. Allow the cookies to cool on a cookie rack
9. Once completely cooled sprinkle with powdered sugar.
Tip: The cookies have more flavor when served the next day. Place them in a cookie jar and let them set overnight, and then...enjoy!!!
