Sassy Spanish Omelet is a scrumptious breakfast treat or late night foodfest that is filled with enormously savory tasty goodness!

1 pound ground beef
¼ pound chorizo sausage (bulk or with casings removed from links)
1 onion, chopped
1 cup sliced mushrooms
1 package taco seasoning mix
? cup water
6 eggs (will make 2 large omelets)
1 teaspoon milk
pinch of salt and pepper
1 tablespoon butter
2 avocados, diced, divided
4 green onions, diced, divided
½ cup sharp cheddar cheese, shredded, divided
½ cup jack cheese, shredded, divided
3 roma tomatoes, chopped, divided
1 (2.25 oz) can sliced black olives, divided
¼ cup of your favorite taco sauce, divided
½ cup sour cream, divided
