Sausage Cheese Shells

Delicious and flavorful shells topped with and easy to make sauce.

Shells
1 pound hot Italian sausage, casings removed
1 large yellow onion, chopped
1- 10 ounce package frozen chopped spinach, thawed and well drained
1- 8 ounce package reduced fat cream cheese, room temperature
1 egg, beaten
2 cups shredded mozzarella cheese, divided
2 cups shredded cheddar cheese, divided
1 cup small curd cottage cheese
1/4 cup grated parmesan cheese
1/4 teaspoon black pepper
1/3 teaspoon ground cinnamon
1 box jumbo pasta shells

Sauce
1- 29 ounce can no salt added tomato sauce
1 tablespoon dried minced onion
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried parsley flakes
2 cloves garlic, minced
1 teaspoon granulated sugar
1 teaspoon dried oregano
1/4 teaspoon black pepper
