Sausage Pepper Casserole

A cheesy sausage and pepper dish that will warm you up

1 lb. smoked sausage
1/2 lb. red potatoes
1/2 stick butter
4 cups of shredded cheddar cheese
4 cups of shredded colby-jack cheese
1 large red pepper, chopped
2/3 cup tomato, diced
Salt and pepper to taste
- Cut smoked sausage into 1/2 pieces and chop a large red pepper, then pan fry in olive oil until meat is browned - quarter and boil potatoes (don't forget to salt your boiling water) - preheat oven to 350°F - Add potatoes, sausage, peppers, and diced tomatoes to a casserole dish - Mix in most of cheese mix, leaving just enough to layer over the top of casserole - Add a layer of the remaining cheese to the top of your casserole - Bake for 20 to 30 minutes or until cheese is browned on top - Let cool and enjoy
