For the Sausage, Pepper, Onions, and Rice:
Add 1 cup of rice to 2 cups of boiling water after 10-20 mins. reduce the heat rice will be finished cooking by 30 minutes.
Cut both links of beef sausage at an angle and roast in a separate pan with the pepper and the onion then remove the pepper and onion and (fry the sausage hard-optional)
Place the rice on a nice plate and add the sausage peppers and onions.
Add 1 teaspoon salt and 1 teaspoon pepper while the rice cooks.
Add Louisiana hot sauce (optional)
For the Braised Cucumbers
Thinly sliced cucumbers
Season with 1 tsp. of salt and 1 tsp. of pepper
Add 1 tsp. of yellow mustard
Add 1 tsp. of sugar
Use 1 tsp. of water to marinate
To braise the cucumbers you must allow them to cook for 5-10 minutes on medium-high and then promptly remove from the heat. The cucumbers should still be a little crunchy.
