Sauteed Corn with Red Bell Pepper and Bacon

5 strips of bacon, cut into one inch pieces
1 onion, chopped
1 red bell pepper, chopped
4 cloves of garlic, finely minced
1/3 cup dry white wine
1 bag (16 oz) frozen corn, thawed
1/2 tsp. salt
1/4 tsp. pepper or to taste
1 tsp. chili powder
1. In a medium sauté pan, cook bacon over medium heat. 2. Take bacon out of the pan and set aside. Keep about a tablespoon of bacon fat in the pan. 3. To the bacon grease, add the chopped onions and the chopped bell pepper. Cook for about 4 minutes. 4. Add the minced garlic and cook for one more minute. 5. Add the white wine and scrape the bottom of the pan to deglaze. Cook until wine reduces almost completely. 6. Add the corn and stir to combine with the other ingredients. 7. Add the salt, pepper, and the chili powder and cook for about 8 more minutes. 8 Stir in reserved cooked bacon. Enjoy!
