Savory Cashew Chicken

An easy meal with a rich, savory sauce!

2 lbs. boneless skinless chicken breast, diced
1/3 cup flour
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon ground ginger
2 tablespoons sesame oil
1/2 cup scallions, chopped
1 red bell pepper, cubed
5 stalks celery, diced
1 cup carrots, sliced
3/4 cup cashews, halved
Sesame seeds for sprinkling


Sauce:
1/2 cup soy sauce
1/4 cup rice vinegar
3 Tablespoons brown sugar
3 Tablespoons ketchup
2 Tablespoons red pepper flakes
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1 teaspoon basil
1 Tablespoon corn starch
1. Place the flour, pepper, garlic and ginger in a bowl and mix. 2. Add the chicken and toss to coat. 3. Heat oil in the pan. Add green onions and cook for about 1 minute. 4. Add the chicken. Cook until completely browned on all sides. 5. While the chicken is cooking, mix together the sauce, leaving out the corn starch. 6. Place the chicken, veggies, and sauce in the slow cooker. 7. Cook on high for one hour. Stir and turn down heat to low. Cook for another two hours. 8. Add the cashews. 9. Dissolve the cornstarch in a small amount of water and stir into the chicken mixture. Turn heat off and allow to thicken. 10. Serve over rice and lightly sprinkle sesame seed on top. 11. Enjoy!
