Savory Chappo Chilli

I have been making this chili for 20 years, and it is packed full of vegetables and very tasty and filling.One of My family's favorites served with tortilla chips, cheddar, sour cream, green onions and avocado.

4 stalks celery w/leaves
3 green onions chopped
2 cloves minced garlic
1 large onion chopped
1 green pepper chopped
1 Tb. olive oil
2 lb. of ground beef
1 15 oz. can tomato sauce
2 cans diced tomatoes
1 6oz. tomato paste
2c. water
4-6 Tbs. menudo spice mix(chilli powder)
serve with tortilla chips and condiments such as sour cream, avacado, cheddar cheese, freshly sliced green onions, lettuce and tomato.
1tsp. salt
freshly grated pepper
1 can pinto beans undrained
1 can black beans undrained
2 packets goya seasoning
saute first 5 ingredients in oil until soft; add the rest and cook 30 min. Serve with condiments such as sour cream, avocado, fresh sliced green onion and tortilla chips.

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
