Savory Chicken Cacciatore

I have been making this Italian dish for 20 years, and it is one of my families favorite comfort foods. The fresh mushrooms and green pepper add to the delicious authentic homemade flavors. Its perfect partner is a fresh salad and cheesy garlic bread.

8 skinless boneless chicken breasts
1/2 ts salt
1/4 ts pepper
all purpose flour
1/3c olive oil
1 onion chopped
3-4 cl garlic minced
1/2 pd fresh mushrooms halved
2 16 oz can whole tomatoes quartered
2 16 oz cans tomato sauce
1- 4 oz jar pimientos
1/2c vermouth(I used chicken broth)
1 tsp salt
3 bay leaves
2 tsp thyme
1 tb oregano
1 tb basil
1/2 tsp pepper
2 green peppers chopped
Hot cooked spaghetti
Parmesan cheese
3 TB olive oil
1/2 ts salt
1/4 ts pepper
