(Secretly Healthy) Deep Dish Chocolate Chip Cookie Pie

169

This secretly healthy pie is a thick slice of rich, gooey deliciousness. The texture is perfect, slightly crunchy on top but gooey in the center, and the ideal choice for days when you're craving something serious but don't want all of the unhealthy junk. The beans add fiber, protein, and nutritional content, while still satisfying that craving for a warm chocolate chip cookie.

12
2 cans white beans or garbanzos (drained and rinsed)
1 cup quick oats (or certified-gf quick oats)
1/4 cup unsweetened applesauce
1 1/2 Tbs grapeseed oil (or 3 Tbs of any other oil of choice)
2 tsp pure vanilla extract
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 1/2 cups brown sugar
chocolate chips
Blend everything (except the chips) very well in a good food processor or blender. I used a blender, and did the dry ingredients and set them aside, then the wet ingredients, and then mixed the wet and dry together by hand. Mix in chips, and pour into an greased glass pan. Bake at 350 degrees for around 35-40 minutes. Let cool for at least 10 minutes before removing from the pan. If desired, serve with chocolate sauce (see my recipe for healthier chocolate sauce! http://myrecipemagic.com/recipe/recipedetail/healthy-chocolate-sauce)
