Sharp Cheddar Cheese Grits

Perfect for my Shrimp and Grits recipe, but also a wonderful side dish on its own. If you want to amp up the creamy factor, add 1/4 cup cream cheese with the sharp cheddar cheese.

1 1/3 cups water
14 ounces chicken broth
1 cup milk
1/2 teaspoon salt
1 cup quick-cooking grits
3/4 cup sharp cheddar cheese, shredded
1/4 cup Parmesan cheese, freshly grated
1/2 teaspoon hot sauce, or to taste
1/4 teaspoon ground white pepper
Bring the first four ingredients to a boil in a medium saucepan over medium-high heat; gradually whisk in the grits. Reduce heat to low, and simmer, stirring occasionally, 10 minutes or until thickened. Stir in Cheddar cheese and remaining ingredients.
