Short Rib Lettuce Wraps

This was an “Oh my God these are insane” type of thing. The truth is, I just started throwing things in the dutch oven (I never thought Coke and red wine would work in a dish but it does here). I’m not trying to brag or anything but this recipe is really darned good

For the short ribs:
5 meaty short ribs, about 1 1/2- 2 pounds
1/2 tsp salt
1/2 tsp freshly cracked pepper
2 tsp vegetable oil
1 cup celery, chopped
1 cup carrots, chopped
1 onion, chopped
2 tsp garlic, minced finely
1/2 small can tomato paste
1 cup red wine
2 cups beef stock
1 cup Coke (or any other cola- save the rest in case you need to add later for sweetness)
1 teaspoon chopped fresh thyme
1 teaspoon fresh sage
2 bay leaves
For the lettuce wraps:
Braised short rib meat, shredded
10-12 Butter lettuce leaves
1/2 cup shredded white cheddar
3-4 whole dill pickles, sliced
