Shredded BBQ Pork Tacos

This is one of those no fuss, throw-in-the-crockpot and go recipes. And it makes sooooo much that leftovers are a must! So freeze some, toss some in with your eggs in the morning, and throw tacos together all week long.

3 lb boneless pork roast

8 garlic cloves, minced

2 tsp ground coriander

2 tsp ground cumin

2 tsp dried oregano

1 tsp onion powder

1/2 tsp salt

1/2 tsp ground black pepper

1/2 tsp cayenne pepper

1 cup beef broth
Mix this rub together and work it into the pork. Place the pork in the crockpot, add your broth, and head out the door. After 5-6 hours on high or 8-9 hours on low, the pork will be so tender and shred...
