Ready in just 30 minutes, Shrimp Coconut Curry Soup is a richly flavored main dish soup that’s easy enough for any night of the week.

5 oz shiitake mushroom, stems removed and thinly sliced
1 red bell pepper, finely chopped
2 tbsp garlic, minced
2 tbsp soy sauce
2 tsp ginger paste
2 tbsp red curry paste
4 cups chicken stock
2 tsp fish sauce
1 (14 oz) can coconut milk (regular, not light)
½ tsp salt
½ tsp pepper
1 lb large shrimp
