Shrimp Salad with Tomatoes & Feta

Looking for a tasty, yet zesty shrimp recipe? This shrimp salad recipe is a light, protein-packed dish that you can serve as a side dish or the main entree on a weeknight. It’s deliciously saucy, perfectly rich, and amazingly flavorful! You don’t need many ingredients to get the best flavors out of the shrimp. Once the shrimp are added to the pan, the tip is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds and get rubbery. This indicates overcooking. Keep it low carb and serve this over zucchini noodles or with cauliflower fried rice!

3 tbsp olive oil
3 oz red onions
2 garlic cloves
8 oz plum tomatoes
1/2 cup white wine
1/4 cup fish stock
1/2 tsp salt
1/2 tsp cayenne pepper
1/2 tsp sweet paprika
32 oz large shrimp
2/3 cup crumbled feta cheese
