Simple Butternut Squash Soup - Who knew making thick and creamy soup could be this easy and delicious? YUM!

4 cups peeled, cubed and roasted butternut squash
1 medium size apple, peeled, cored and cubed (we used Granny Smith)
½ large yellow onion, diced
1 tbsp. coconut oil
4 cups chicken broth
1 can coconut milk (we used Trader Joe's brand)
1 tsp salt (or more to taste)

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
