I love an Indian curry. I have made many authentic ones, but sometimes you just want something quick and easy This is a recipe using a concentrated store bough curry paste. We usually use Patak’s curry paste and just choose what flavor we are in the mood for. More often than not, we choose something with a bit of heat! We usually serve over basmati rice with naan bread. This is a large recipe and freezes great if you don’t plan on eating it all over a couple of days.

1.5 lb chicken diced chicken breast
2 zucchinni squash, sliced
1 medium yellow onion, sliced
13.5 oz can of coconut milk
28 oz can of diced tomatoes
10 oz jar of Patak's concentrated curry paste
Cooked basmati rice and naan bread to accompany the meal
