Sixi Balls (Lion’s Head Meatballs)

This is a must-have for Chinese New Year feasts and every important celebration in north China! It is always served in four, since “sixi” means “four happy things” in Chinese. In this dish, “sixi” suggests four best blessings in Chinese traditional culture: good fortune, wealth, longevity, and happy family life.

Meatballs:
10 oz. minced pork (70%~80% lean)
2 oz. Chinese water chestnut
2 oz. dry breadcrumbs
1 egg white
1 tsp. cornstarch
2 T. light soy sauce
3 T. chicken stock
1/2 tsp. white pepper powder
1/2 tsp. ginger powder
1 tsp. salt
1 tsp. sugar
Side ingredients:
4 heads small rapes
14 T. vegetable oil (for frying; actual consumption is 2 T.)
2 tsp. cornstarch
3 T. chicken stock
1 tsp. light soy sauce
1/2 tsp. sugar
3/4 oz. green onion
3/4 oz. ginger
