Skinny Mac & Cheese

Macaroni and Cheese on the lighter side! We really liked it! Give it a try and I hope you ENJOY!

3 Cups Penne Pasta
8 oz. Low Fat Cottage Cheese
8 oz. Ricotta Cheese
3/4 Cup grated Parmesan Cheese
3/4 Cup Sharp Cheddar (2%)
2 cloves of Garlic minced
1/2 tsp. salt (or according to taste)
1/2 tsp. Pepper (or according to taste)
3/4 Cup Italian Bread Crumbs
Butter Spray (the 0 Calorie kind)
Cook pasta according to package directions. Mix Ricotta, Cottage Cheese, Sharp Cheddar, Garlic, salt and pepper until smooth (I used my Immersion Blender) Mix cheese sauce and pasta together and put in greased 9 x9 glass dish. Sprinkle Parmesan cheese and Bread crumbs on top and spray Butter Spray on top. Bake in a preheated oven at 350 for 15-20 minutes. ENJOY!!!!

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
