Slightly Spicy Chicken Salad

A delicious (no mayonnaise) version of chicken salad with just a hint of chipotle pepper.

2 cups rotisserie chicken, diced
Salad:
2 stalks celery, diced
1/3 cup dried cranberries or cherries
1/4 cup slivered almonds
Good sandwich bread OR
Chopped Romaine lettuce

Dressing:
When I'm lazy, I pour the remains of a bottle of Brianna's Poppy Seed dressing over this, but alternatively...

1/2 cup plain Greek yogurt
1/2 tsp. chipotle chile powder
a squeeze of lemon juice
salt and pepper to taste
Mix salad ingredients together in a large bowl. In a separate bowl combine the dressing ingredients and mix well. Stir into the salad and serve on bread or over lettuce. I also really like this with rice crackers.
