Slow Cooker Chicken and Beans

Super easy recipe that can be thrown together in the morning so its ready for you at dinner.

2 large boneless, skinless chicken breasts
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1 can cannellini beans, rinsed and drained
1 can Italian diced tomatoes
2 tsp basil
1 tsp thyme
Salt and pepper to taste
In a slow cooker combine the peppers, beans, tomatoes, and seasonings. Place chicken breasts in the slow cooker and spoon some of the bean mixture over the chicken. Cover and set heat to low, allowing chicken to cook about 6 hours.
