Slow Cooker Hungarian Style Pork Stew

A slow cooker Hungarian Goulash inspired stew full of paprika flavor and hearty vegetables.

1 pound lean pork, trimmed and cut into bite-sized pieces
1 cup onions, thinly sliced
3 cups bell peppers, thinly sliced (any color)
2 cups low fat chicken broth
3 tablespoons paprika, Hungarian sweet
1 cup beer (any style, but stout works best)
1 teaspoon garlic powder
1 1/2 teaspoons salt
1/2 teaspoon black pepper
4 cups basmati rice, cooked
1/2 cup cold water
2 tablespoons cornstarch
1/4 cup fresh parsley, chopped
